Here is a recipe for Salmon that is good and easy! I am going to write this as if I were cooking for 4, but you could easily make it for 1 by cutting down on the ingredients.
3 points for one 4oz fillet with tomato topping
What you need:
4 4oz Salmon fillets (I use frozen fillets that come to 2 points per oz cooked)
1 Can chopped tomatoes (fresh can work but the canned adds something)
2 Scallions finely sliced
1TBS Olive Oil
1tsp Oregano
1tsp Thyme
2TBS Lemon Juice
Salt and Pepper
4sheets Aluminum Foil (Big enough to form a packet around each piece of fish)

1.) Mix Olive Oil with a dash of both the Salt and Pepper in a bowl
2.) Coat each Salmon fillet with olive oil mixture/ let sit
3.) In a separate bowl combine the Tomatoes, Scallions, lemon juice and remaining spices
4.) Place each Salmon fillet on one of the aluminum sheets/ form foil into a packet without closing all the way
5.) Spoon Tomato mixture over each fillet/ sealing the packets when finished and placing them on a baking sheet (packets may leak a little)
6.) Bake at 400 for 25mins or until fish fakes easily with a fork
This comes out really nicely and goes well with rice or a vegetable like asparagus

Here is my Tuna Pita recipe as promised forever ago! Of course it is also really easy to make...always nice
What you need:
1 whole wheat Pita (cut in 1/2, so you have one side of the circle)
1 TBS Reduced fat Mayo
1 stalk Celery (chopped)
2TBS Parmesan cheese/grated (no mixed kinds, they are more points)
Dash of Ground pepper
Whatever else you like in tuna
1.) Preheat oven to 350 or use a toaster oven (which is more efficient)
2.) Mix the Tuna with the mayo, pepper and celery (after drained)
3.) Spread over pita with the cut side of the pita facing upward
4.) Sprinkle parmesan over the top to cover the tuna
5.) Finally put the whole thing in the oven for about 20min or until cheese is browned
*The tuna is like molten lava when hot, so be careful! Trust me!

Simple and you may all know this one already, but its a good one...
Pita Chips
Low-fat pitas (I use any pita thats 2 points)
Cooking Spray
Seasoning you like
1.) cut the pita into wedges, and then separate the sides from each other.
2.) Spray a cookie sheet with the cooking spray
3.) Align the chips on the sheet and sprinkle with seasoning
4.) In a preheated oven at 350 cook for about 10 mins (check to make sure they don't over cook)
Each serving is the amount that equals one pita, usually 16 chips ( 2 points)
*I love these with hummus, soup, or plain.
